What about hooking up with a hiker/vegan ON the west coast who could deal with drops from there… kind of a personal shopper? mailing a check from Miami would be a helluva lot cheaper than mailing food.

Hey Cypress! I also was surprised at how much food I was buying and eating towards the end. If you’ve already done the AT, Poky, then you already know what to expect, but I’m glad I had a flexible resupply plan.
I found it easy to remain vegetarian along the PCT with a combo of in-town resupply, maildrops sent by me from larger trail towns, and a few pre-planned trail magic visits. I’m not super-picky, though - cheese stuff was fine - I didn’t stress about the source of the rennet. If that’s a concern to you, then you’ll be maildropping food from home. Although I don’t require gourmet food, I found that a ziploc of freeze-dried mixed veggies (like from justtomatoes.com) helped make the various “dinners” more palatable towards the end of the hike.
I followed a modified version of what’s in Yogi’s Handbook. Warning - boring list, so skip it if you’re not really interested:
Warner Springs - would have been tough finding enough veggie food here - my folks met me with food, maildrop would’ve worked, too.
Paradise Cafe - they’ve got a good veggie burger - maybe enough food to get you to Idyllwild
Idyllwild - easily bought veggie food here
Big Bear City - also easy to buy veggie stuff
Wrightwood - wonderfully easy to buy veggie
Agua Dulce - good resupply at local grocery, supplemented with a Trader Joe’s visit in LA. In addition, sent a box with 12 days of veggie food to Kennedy Meadows.
Tehachapi - easy to buy veggie
Kennedy Meadows - thank goodness I had the box from Agua Dulce
VVR - was able to buy 1 veggie dinner and some muffins/snacks to get me to Mammoth
Mammoth - easy to buy veggie
Sonora Pass - a friend met me with several days of veggie food, enough to get me to South Lake Tahoe
Echo Lake/South Lake Tahoe - could possibly have resupplied veggie out of Echo Lake, but had planned to go into South Lake anyways. Wonderful Raley’s there (lots of organic/veggie items), an easy walk from the South Shore Inn (great place to stay - say hi to Ziggy!). From here I sent boxes to Belden, Burney Falls State Park, Castella and Seiad Valley.
Sierra City - easy veggie resupply at market
Belden - VERY glad I sent a box. You’d need one no matter how omnivorous you are.
Old Station - easy to find a veggie dinner and snacks for 1 night
Burney Falls SP - glad I sent a box - in-store veggie resupply maybe possible, but tough
Castella - veggie resupply maybe doable, I had a maildrop
Seiad Valley - glad I had a maildrop box, but may have been able to do a veggie resupply (not far to Ashland)
Ashland - easy veggie resupply, plus sent boxes to rest of Oregon (Crater Lake, Shelter Cove, Big Lake Youth Camp, Timberline). Glad I did, although I probably could have eked out enough at Shelter Cove. Big Lake Youth Camp was a wonderful, since all the food they serve is veggie and delicious.
Cascade Locks - limited veggie choices at the market, but it worked. Also sent boxes to White Pass, Snoqualmie, The Dinsmore’s (Skykomish), and Stehekin. I probably could have found enough veggie dinners at White Pass and Snoqualmie, but it was nice to have the maildrops.
