I just did a section hike From Springer into NC last week and was able to find water at least every 7 - 8 miles. Here’s where in the section you listed:

The stream in front of Low Gap Shelter
The spring at Blue Mountain Shelter (and the spring 0.1 mile before the shelter.
Water dripping from the rocks at the USFS79 crossing (Tray Mountain Road). Heading north, you’ll see water running out of a steel drainpipe that crosses under the road. Cross the road and take a few steps to the right to find the source.
The spring at Tray Mountain Shelter
The spring at Deep Gap Shelter
The stream in front of the Plumorchard Gap Shelter

Your best bet is to ask southbounders where they got water and share your information. I often carried 2 - 2.5 quarts just to be on the safe side.

I will definitely carry the extra 2 - 2.5 quarts for safety

No problem. There are also other sources that we didn’t use based on the amount of water we had at the time. Before you go, check out the Mountain Crossings website as they have a GA water report section and it was just updated on 10/3.
