Any recommendations on a cheese that will be OK unrefrigerated for a week (or even several weeks)? It's OK if it "sweats" and becomes soft; it'll be in double plastic bags. Cabot Extra-Sharp Cheddar? Some kind of imported hard cheese?

Any chedder block will do just fine. You can also try Baby Bell cheese, they are little round cheese bites inside a wax cover. The wax makes great fire starter.

I actually conducted an experiment last summer where I left a Baby Bell cheese un-refrigerated for 7 days at room temps (70's). No spoilage or problems. If anything, the taste was even stronger and better.
