What is the outcome of Snickers and other chocolate bars on the PCT during April & May? Do these foods melt in the desert heat? Are there other foods to be wary of on the PCT?

Well, chocolate can get a little gooey, but it isn’t a huge problem. Your food will be in your pack, not in the sun, so it won’t completely melt. Snickers hold up pretty well (although you may have to lick the chocolate off the wrapper); a whole chocolate bar would be more likely to make a mess.
Other than chocolate, I would say stay away from soft cheese (I usually bought the stuff in wax - most grocery stores sell Gouda that way) or other cheeses that get icky when they get hot. And remember that fresh fruits and veggies (tomatoes, avocados, oranges, etc) go bad faster, especially if they are cut. And (unfortunately) you gotta watch out for breads/tortillas that don’t have preservatives - the all natural ones will go bad pretty fast.
Have fun!
