Well, “freeze drying” is a process where super dry super cold air is blown across the food, sometimes also done in conjunction with near total vacuum, and would be impossible to do at home. But I would suggest Lip Smackin’ Vegitarian Backpackin’ Cookbook on home “dehydrating” tips.
