Yes, a handful of people have thru-hiked the IAT. I think that Nimblewood Nomad wrote about it in 10 million steps.
The ALDHA member directory lists several individuals that have done it. Why not join, and then contact these people?

is jo-jo smiley still on the trail? i was up on the iat in quebec and there were no entries from her anywhere and noone had seen her go thru,is she not that far along yet? there was an older lady up there about to finish her ect hike.stating in one log book at lac matane that she had been on the trail for 11 months and ENOUGH IS ENOUGH! you see the matane is a VERY RUGGED PLACE!
