On the AT, are you required to pitch your tent only on designated tent pads or can you leave the trail and set up your camp pretty much wherever you want? I know there are some places i.e. national parks, where there are rules, but in general can you set up where you want?

Just stay off private land. Pretty much any where it will fit and leave no trace. There are places where you can not but they are few. With as crowed as the A T is now it does make it hard to find a place sometimes.
