A long sleeve shirt seems to work best. Some people swear by 100% cotton, other swear by the SPF rated shirts.
Me? I use a thrift-store polyester dress shirt. Price? $4.

we just had a really long thread on this topic on grand_canyon_hikers@yahoo.com
Different people said different things but most seasoned canyon hikers said to wear cotton so you can wet the shirt and wear it wet to keep your core body cool. I highly recommend reading the thread on that group’s discussion.
