As I recall, there are not many, if any tent platforms on the Long Trail. One possible place would be Stratton Pond, which is a popular destination.
Peaks
I hiked from Sherburne Pass north last summer with a tarp. The only place we had trouble setting it up was the tent platforms at Montclair Glen (the shelter right below Camel’s Hump). We stayed in the shelter with major snorage.
In general, I agree with Peaks. With a bit of ingenuity you’ll be fine.
Can’t speak for the south 100 miles, though.

I’ve gone from Williamstown MA to App Gap and to the best of my recollection there are tent platforms at maybe 1/4 of the shelters. The vast majority of the shelters do some clearing around them suitable for setting up tents.
