What happens to all the old trail registers from the shelters on the AT?
I think some of the old ones would make good reading.

The ones that survive long enough are kept by the maintainers of the section the shelter is in. They usually just gather dust so I am sure your local maintainers will let you look at them. They are a popular pilferage item too unfortunately.

For the trail registers in the White Mts I believe that the AMC keeps them. At the huts every library has a collection of old registers that go way back. I have seen where hikers have left registers with their mailing address and ask that they be sent to them when full. I have often wondered if that ever happens.

When I reached Tuolumne meadows & the fantastic campground store after the incredibly difficult Johm Muir Trail part, they let me take the old journal back to my tent & read back to Cindy Ross's entry, I forget what year, but it was hilariously different from what her book described.... so you just never know what you will find in those archives !
